π Classic Indian Chicken Curry Recipe
π Ingredients:
- 500g chicken (bone-in or boneless, cut into pieces)
- 2 medium onions (finely chopped)
- 2 tomatoes (pureed or finely chopped)
- 1 tbsp ginger-garlic paste
- 3 tbsp oil or ghee
- 1 tsp cumin seeds
- 1 bay leaf
- 2β3 cloves
- 1-inch cinnamon stick
- 1 tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- 1Β½ tsp coriander powder
- Β½ tsp garam masala
- Salt to taste
- Fresh coriander leaves (for garnish)
- 1 cup water
π©βπ³ Instructions:
- Heat the oil/ghee in a deep pan. Add cumin seeds, bay leaf, cloves, and cinnamon. SautΓ© for 30 seconds till fragrant.
- Add onions and cook on medium flame until golden brown.
- Add ginger-garlic paste, stir well and cook for 2β3 minutes till raw smell disappears.
- Add the chopped/pureed tomatoes. Cook till oil separates (about 5β7 minutes).
- Add turmeric, red chili, coriander powder, and salt. Cook the masala for 2 more minutes.
- Add chicken pieces, mix well to coat them in the masala. Sear for 5β6 minutes.
- Add 1 cup of water, cover and simmer on low-medium heat for 15β20 minutes, or until chicken is cooked and tender.
- Add garam masala, stir and simmer uncovered for 5 more minutes to thicken the gravy.
- Garnish with fresh coriander leaves and serve hot!

- Roti or naan
- Sliced onions and lemon wedges on the side
