πŸ“ Ingredients:

  • 500g chicken (bone-in or boneless, cut into pieces)
  • 2 medium onions (finely chopped)
  • 2 tomatoes (pureed or finely chopped)
  • 1 tbsp ginger-garlic paste
  • 3 tbsp oil or ghee
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 2–3 cloves
  • 1-inch cinnamon stick
  • 1 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • 1Β½ tsp coriander powder
  • Β½ tsp garam masala
  • Salt to taste
  • Fresh coriander leaves (for garnish)
  • 1 cup water

  1. Heat the oil/ghee in a deep pan. Add cumin seeds, bay leaf, cloves, and cinnamon. SautΓ© for 30 seconds till fragrant.
  2. Add onions and cook on medium flame until golden brown.
  3. Add ginger-garlic paste, stir well and cook for 2–3 minutes till raw smell disappears.
  4. Add the chopped/pureed tomatoes. Cook till oil separates (about 5–7 minutes).
  5. Add turmeric, red chili, coriander powder, and salt. Cook the masala for 2 more minutes.
  6. Add chicken pieces, mix well to coat them in the masala. Sear for 5–6 minutes.
  7. Add 1 cup of water, cover and simmer on low-medium heat for 15–20 minutes, or until chicken is cooked and tender.
  8. Add garam masala, stir and simmer uncovered for 5 more minutes to thicken the gravy.
  9. Garnish with fresh coriander leaves and serve hot!

  • Roti or naan
  • Sliced onions and lemon wedges on the side
