🍗 Honey Roast Chicken Recipe

🛒 Ingredients:

For the Chicken:

  • 1 whole chicken (about 1.5–2 kg / 3–4.5 lbs)
  • Salt and black pepper to taste
  • 2 tbsp olive oil or melted butter
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary (optional)
  • 1 lemon (halved)
  • 4 garlic cloves (crushed)

For the Honey Glaze:

  • 4 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard (or regular mustard)
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tbsp melted butter

1. Preheat Oven:
Preheat your oven to 200°C (400°F).

2. Prepare the Chicken:

  • Pat the chicken dry with paper towels.
  • Rub it all over (including under the skin if possible) with olive oil or melted butter.
  • Season with salt, pepper, garlic powder, paprika, and thyme.
  • Stuff the cavity with lemon halves and crushed garlic cloves.

3. Mix the Honey Glaze:
In a small bowl, combine honey, soy sauce, mustard, vinegar, and melted butter. Mix well.

4. Roast the Chicken:

  • Place the chicken breast-side up on a roasting rack or in a baking dish.
  • Roast for 45 minutes uncovered.

5. Baste with Glaze:

  • Remove chicken from oven and generously brush the honey glaze all over.
  • Return to oven and roast for another 25–30 minutes, basting with more glaze every 10 minutes.
  • If the top browns too quickly, cover loosely with foil.

6. Check for Doneness:
The chicken is done when the juices run clear and the internal temperature at the thickest part (thigh) reaches 75°C (165°F).

7. Rest and Serve:
Let the chicken rest for 10–15 minutes before carving. This helps keep it juicy.

  • Serve with roasted veggies, mashed potatoes, or a fresh green salad.
  • Drizzle extra glaze from the pan over the slices.

🍯 Tips:

  • For extra crispy skin, broil for the last 3–5 minutes.
  • You can marinate the chicken with the glaze for a few hours before roasting for deeper flavor.
